Quinoa and Black Bean Salad

If there’s one thing that’s endlessly versatile, it’s quinoa. This Quinoa and Black Bean Salad is light, protein-packed, and comes together faster than you can say “meal prep.” It’s perfect for those days when you need something quick that’s still loaded with flavor and nutrition.

Ingredients

- 1 cup quinoa, cooked

- 1 can black beans, drained and rinsed

- 1 red bell pepper, diced

- 1 small red onion, diced

- 1 avocado, diced

- 2 tablespoons olive oil

- Juice of 1 lime

- 1 teaspoon cumin

- Salt and pepper to taste

Instructions

1. In a large bowl, combine the cooked quinoa, black beans, bell pepper, onion, and avocado.

2. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.

3. Pour the dressing over the quinoa mixture and toss to combine.

4. Serve immediately or refrigerate for later.
